The Kiritsuke is a versatile hybrid blade inspired by traditional Japanese chef knives, combining the precision of a sashimi knife with the versatility of a gyuto. Its long blade and angled tip make it ideal for slicing fish, carving meat, chopping vegetables, and performing delicate precision cuts.

Forged from 3-layer AUS-10 Japanese steel, the blade offers excellent hardness, corrosion resistance, and long-lasting edge retention. With a hardness of 60–61 HRC, the knife maintains exceptional sharpness even with frequent use.

The blade features a hammered finish with a distinctive black coating, which helps reduce food sticking while giving the knife a striking modern appearance.
